Ingredients
  

Cajun Chicken

  • 3 or 4 Chicken Thighs or Maryland Cut Skin-on
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp White Pepper
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika Powder
  • 1/4 tsp Onion Powder
  • 1/2 tsp Cayenne Pepper Powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 tsp brown sugar
  • 1/2 juice of a lemon
  • Cooking Oil
  • Optional: 1/2 tsp chilli powder

Cucumber Dressing

  • 200 gm yoghurt greek or sour cream
  • 1/2 cucumber deseeded
  • 1/2 red onion
  • 1/2 juice of lemon
  • Salt & Pepper to taste

Instructions
 

Cajun Chicken

  • Mix all the seasonings, brown sugar & lemon juice into a bowl with just enough oil to create a marinade
  • Marinade your chicken pieces for a minimum of 20 mins. The longer the better
  • Prepare a hot frypan and sear the chicken until desired colour.
  • Transfer the seared chicken onto a baking sheet and continue to roast the chicken in a preheated oven @ 180C for another 15mins.

Cucumber Dressing

  • Grate the cucumber with a box grater until cucumber is shredded
  • Finely chop the onion
  • Mix all together until a nice creamy dressing
  • Season to taste
