Chicken Fajitas

Ingredients
  

Spice Mix:

  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp dried oregano
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1 Calamansi Lime Juiced

Simple Salsa:

  • 1 Tomato Diced
  • 1/2 Red Onion Diced
  • 2 stalks Coriander Chopped
  • 1 Calamansi Lime Juice
  • 1 clove Garlic Minced
  • Salt & Pepper to taste

Mains:

  • 200 g chicken thigh/ Mushroom for vegetarian
  • 1 Calamansi Juiced
  • 1 capsicum cut into strips
  • 1 tomato diced
  • 1/2 large red onion
  • 2 stalks coriander
  • 1/4 head ice berg lettuce shredded
  • 1 packet flour tortillas / burritos

Instructions
 

  • Combine spices and herb (Spice Mix) and 1 tablespoon olive oil in medium bowl and add chicken to marinate for 10 minutes. Set aside.
  • In a fry pan, sear chicken until coloured (does not need to be fully cooked) and set aside. In the same pan, add some oil and saute the onions. Add capsicums when onions are soft and cook through.
  • Slice chicken then add chicken to fry pan, make sure the chicken is fully cooked. Then let rest.
  • Warm tortillas on a large pan until lightly charred.
  • Assemble you fajitas, by placing the a bed of lettuce, then salsa, then chicken/veg mix, topped off with some fresh coriander and a squeeze of calamansi juice on top of the tortilla.
