Dakgangjeong - Soy Garlic Fried Chicken

Everyone loves fried chicken and the recent craze is KFC = Korean Fried Chicken. There are a few variations of korean fried chicken. You can have it in original taste or coat with gochujang to make it a spicy version or a non spicy version which is made by coating the deep fried wings in a garlic and honey soy glaze. The secret to a good KFC is of course the light and cripsy crust! You will be suprised at how quick and easy it is to make these fried chicken at home!

- 1 kg Drumlets
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/4 tsp White Pepper
- 1 tbsp Soya Sauce
- 1 tbsp Mirin
Sauce:
- 5 tbsp Soya Sauce
- 1 tbsp Brown Sugar
- 2 tbsp Korean Rice Syrup
- 1 tbsp Oil
- 1 tsp Garlic minced
Others:
- 1/2 pot Oil for frying
- 1 cup Potato Flour
- 1 tsp Green Onion chopped, for garnish
- 1/2 tsp Sesame Seeds garnish
Marinate the chicken with pepper, soya sauce, mirin, garlic and onion powder.
Leave in fridge to marinate for at least 1 hour before frying
Heat a pot of oil to 180C.
Coat the chicken with potato flour. Dust off excess flour and deep fried until golden brown. It takes appromixately 8-10 mins.
Leave on a colander to drain off excess oil.
Sauce:
Heat 1 tbsp oil in a pan, saute the minced garlic till fragrant.
Add brown sugar to caramelise. Add in soya and rice syrup. Mix well.
Add in the chicken wings and coat evenly with the sauce.
Sprinkle sesame seeds. Garnish with chopped spring onions after plating up.
- You can use any part of the chicken ie, drumlets or wings
- For spicy version, you can add 1 tbsp of gochujang to the soy sauce mixture
