Korean Fried Chicken with Soy Glaze

Dakgangjeong - Soy Garlic Fried Chicken

Everyone loves fried chicken and the recent craze is KFC = Korean Fried Chicken. There are a few variations of korean fried chicken. You can have it in original taste or coat with gochujang to make it a spicy version or a non spicy version which is made by coating the deep fried wings in a garlic and honey soy glaze. The secret to a good KFC is of course the light and cripsy crust! You will be suprised at how quick and easy it is to make these fried chicken at home!

Ingredients
  

  • 1 kg Drumlets
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/4 tsp White Pepper
  • 1 tbsp Soya Sauce
  • 1 tbsp Mirin

Sauce:

  • 5 tbsp Soya Sauce
  • 1 tbsp Brown Sugar
  • 2 tbsp Korean Rice Syrup
  • 1 tbsp Oil
  • 1 tsp Garlic minced

Others:

  • 1/2 pot Oil for frying
  • 1 cup Potato Flour
  • 1 tsp Green Onion chopped, for garnish
  • 1/2 tsp Sesame Seeds garnish

Instructions
 

  • Marinate the chicken with pepper, soya sauce, mirin, garlic and onion powder.
  • Leave in fridge to marinate for at least 1 hour before frying
  • Heat a pot of oil to 180C.
  • Coat the chicken with potato flour. Dust off excess flour and deep fried until golden brown. It takes appromixately 8-10 mins.
  • Leave on a colander to drain off excess oil.

Sauce:

  • Heat 1 tbsp oil in a pan, saute the minced garlic till fragrant.
  • Add brown sugar to caramelise. Add in soya and rice syrup. Mix well.
  • Add in the chicken wings and coat evenly with the sauce.
  • Sprinkle sesame seeds. Garnish with chopped spring onions after plating up.

Notes

  • You can use any part of the chicken ie, drumlets or wings 
  • For spicy version, you can add 1 tbsp of gochujang to the soy sauce mixture
