Arrancini is a popular Italian appetitizer that is made up of Italian risotto and cheese! It is a favorite canape to serve and is extremely popular party dish! If you are making a big batch to serve for a party, you can make the balls 3 days in advance!

Risotto Rice
- 1 tbsp Butter
- 1 clove Garlic minced
- 1 each Onion finely diced
- 1 cup Arborio Rice
- 3 cups Chicken Stock or 3 cups of water, and 2 stock cubes
- 1 tbsp Dried Oregano
- 1 tbsp Dried Marjoram
- 1/2 cup Parmesan Arrancini Italian Deep Fried Risotto Ball Recipe
- 1 pinch Salt and Black Pepper
Rice Mix
- 2 strips Bacon Ham small diced
- 1 cup Mozzarella
Fry Mix
- 1/2 cup Flour
- 1 Egg beaten
- 1 cup Breadcrumbs or Panko
- Oil
Aioli
- 200 ml Mayonnaise
- 2 cloves Garlic Minced
- 1 pinch Salt and Black Pepper
Rissotto:
Bring your chicken stock to the boil.
In a large pot, saute butter, garlic and onion on a medium heat until soft. Add rice and cook for a few minutes or until the grains start to turn translucent. Add your dried herbs into the mix.
Add in chicken stock into rice mix, 0.5 cup at a time and keep stirring it until it cooks to al dente. Season with salt, pepper and parmesan.
Spread it out on a baking sheet and let it cool down in the fridge.
Arrancini:
Mix the risotto mix with peas and ham to even consistency.
Divide the mix into 12 balls, then thumb through a small ball of mozzarella.
Re-form the ball and lightly dust with flour, coat with egg, then crumbed with breadcrumbs.
Deep fry the arrancini until golden brown and set aside to cool.
- The rice ball should be cool down completely or slightly cold when using
- You can pre made the rice ball days in advance and store them properly in the fridge
