In a mixing bowl, mix rice evenly with 1 egg. Mix well and set aside.
In a small bowl, crack 2 eggs and season with a pinch of salt. Mix well and set aside.
Heat a deep wok till it is smoky slightly.
Add oil in and pour in beaten eggs.
Quickly scramble the eggs and add in the rice coated with egg.
Give the rice a quick stir and add in crabmeat.
Season with white pepper and soya sauce.
Add in tobiko and green onions. You may add in another tablespoon of oil.
When the rice starts to jump, you can turn off the heat.
Using a non stick pan, make omelette.
Add in the beaten egg and turn off heat once the egg starts to bubble. (Do not overcook the omelette)
Scoop rice to a bowl and turn over the bowl onto a plate.
Transfer the omelette over the top of the rice.
Garnish with crabmeat and green onions.
Serve hot.
