This smoked salmon salad recipe can be eaten both warm or cold. It is a super healthy salad that is packed with nutrients and proteins and can be a great substitute for your carbs! A simple and easy quick meal recipe that you must try!

Equipment

Ingredients
  

Salad Base

  • 2 qty Hard Boiled Eggs
  • 2 cups Leafy Veg Cos, Baby Spinach, Argula
  • 1 big Red Onion
  • 4-5 pcs Cherry Tomatoes
  • 1 bundle Asparagus grilled
  • 1 qty Cucumber
  • 2 tbsp Bacon Bits

Dressing

  • 1/3 cup Greek Yoghurt
  • 2 tbsp Olive Oil
  • 2 cloves Garlic
  • 1 sprig Dill
  • 1 tbsp Mustard
  • 2 tbsp Lemon Juice

Instructions
 

  • Mix dressing ingredients in a bowl. Mix well and set dressing aside.
  • Cut the red onions into thin slices.
  • Drizzle some olive oil to a heated pan, add in one small cube of butter. Add in asparagus for season with salt and pepper. Sauté for 8-10 mins. Set aside.
  • Cut the cucumbers into cubes and halve the cherry tomatoes.
  • Add mixed veggies, cherry tomatoes, diced cucumbers, sliced onions, asparagus and bacon bits to a big mixing bowl.
  • Add in desired amount of greek dressing and toss well.
  • Garnish with hard boiled eggs.
