- 180 gm butter room temperature
- 140 gm castor sugar
- 2 tsp baking powder
- 220 gm plain flour
- 80 ml milk
- 2 tbsp coconut cream
- 2 eggs
- 1 tsp pandan paste
- Vanilla essence
- muffin cups
Preheat oven to 180 deg C.
Combine ﬂour and baking powder, sift and set aside.
Beat butter and sugar until fluffy and white. Add the eggs one by one. Spin a medium speed until well blended. Add the flour mixture alternately with milk until finish (part by part). Then add vanilla essence and pandan paste, mix well.
Fill the batter into the muffin cups 2/3 full and bake for 20-25 mins.
