Master the balance of rich, savoury and sweet. In this segment you will learn the secrets to achieving perfectly crispy, golden chicken bites and tossing them in a velvety, deeply aromatic salted egg yolk reduction.
Where East meets West in culinary harmony. You will learn the classic French technique of extracting deep, robust flavour from prawn heads and local laksa botanicals to create a luxurious bisque, tossed with al dente linguine and finished with succulent seared prawns.
An elegant, modern pastry finale. Revisit the classic Teochew sweet yam paste with a contemporary twist. You will bake a buttery, flaky shortcrust tart shell from scratch and fill it with smooth, fragrant taro paste, coconut cream and sweet ginkgo nuts.
