Pad Thai is a stir fried rice noodles that is tossed in a sweet and sour sauce along with ingredients such as chicken, tofu and vegetables. It is served with some raw beansprouts and lime at the side. If you do not like the taste of raw beansprouts, you can add in to cook.

- 200 grams Pad Thai Rice Noodles
- 100 grams Hard Tofu
- 100 grams Chicken Breast sliced
- 50 grams Bean Sprouts
- 2 tbsp Oil
- 6 cloves Galic diced
- 1 qty Red Onion large, diced
- 1 tsp Ginger Chopped
- 2 qty Eggs Forked
- 2 tsp Soy Sauce
- 3 tbsp Fish Sauce
- 3 tbsp Sugar
- 3 tbsp Rice Vinegar
- 1 tbsp Chilli Flakes
- 1 tbsp Peanuts ground
- 1 qty Calamansi Lime
- 2 stalk Spring Onions Sliced
Place noodles in mixing bowl and cover with boiling water for about 4-5 mins or until the noodle are soft but not cooked.
Mix fish sauce, sugar, rice vinegar and soy sauce.
In a hot wok, add some oil, and sear the chicken breast. Then add shallot, garlic & ginger until fragrant.
Add whisked eggs and scramble letting it brown a little.
Add soften noodles to saute.
Then add tofu, spring onions and beansprouts and cook until noodles are ready.
Serve on plate with calamansi lime, chilli flakes and peanuts.
You can use fresh rice noodles instead of the dried version.
For dried version, soak in water till soften before cooking.
