Youtiao has many names to it. In English term it is called dough stick and Yau Char Kway in dialect term. It is a popular breakfast snack that goes very well with porridge or dipped in soya milk. In Singapore and Malaysia, we love dipping our youtiao in Bak Kut Teh broth. The origin of youtiao has a long history that can be traced back to the Song Dynasty. Knead together to form a dough and rest in fridge for at least one day.
Cut into strips and stack one strip on top of the other strip.
Press the centre of the strip with a chopstick and give it a light stretch before placing it into hot frying oil.
Turn the dough around every few seconds. Fry until golden brown and leave on a paper towel to remove excess oil.

You can pre-made the dough in advance and take it out from the fridge and let it sit at room temperature for 20-30 minutes before rolling out to deep fry. Dough can be kept in fridge for up to 2-3 days by cling wrapping it and placing it in an airtight container.
