What is Chinese New Year without pineapple tarts right? Pineapple tarts are the favourite snack on Chinese New Year as pineapple symbolises wealth and luck. And there are also many different versions of Pineapple tarts which are available. Some prefer the open faced ones while some prefers the balls type. This dough recipe works fine for either style. You can also add pandan paste to make it into a pandan version or cheese powder for funkier taste.
Sift plain flour, custard powder and salt, into the mixture and fold.
Knead dough shortly and portion into 10g balls.
Chill for 1/2 hour.
Assembly
Preheat the oven to 170deg C w/o fan.
Roll pineapple fillings into 9 g balls.
Place the dough ball with plan of the hand and encase the pineapple fillings balls into the dough. Press all around to ensure the dough is intact with the filling ball.
Arrange the balls onto the baking pan with parchment paper and egg wash it evenly.
Bake for 7 mins and turn, and bake for another 8 mins.
Coll on racks and store in air right containers.
